Recently, the McLaughlin Anderson team was treated to a fantastic five-course feast at Chez Le Caribe, graciously hosted by Chef Elvet Carty and Jada Lark. Formerly Hervé Restaurant on Government Hill in Charlotte Amalie, it has been beautifully refurbished by Chef Carty and custom woodworker Jonathan Tuel, and is now air-conditioned.
What an evening! We enjoyed a tender guava-glazed scallop with papaya and cilantro salsa paired with a rosy zinfandel. Next was the best jerk beef I've ever tasted, with pomegranate.

Then, great tableside showmanship as the famous warm spinach and bacon salad was flambéed and served. A sweet, crisp Moscato d'Asti dessert wine went perfectly! Next on this culinary odyssey was an amazing piece of fall-off-the-fork salmon served over a rich, savory oxtail hash and mushrooms - amazing flavors! A Beaujolais was poured. Then, even though we were full and groaning, we just had to polish off the sublime Mango Napoleon with berries that appeared!
This terrific new venue is going to be the talk of the island when people start discovering this sophisticated fine-dining experience. There was plenty of parking right outside too. Excellent personalized service and some of the best food I have ever enjoyed make Chez Le Caribe my choice for my next Big Night Out! Thanks to Chef Carty and his wonderful crew for a fabulous evening.
